This incredible keto turtle cheesecake is a decadent dessert for anyone on a keto diet or low carb journey. It’s a perfect cheesecake that doesn’t require any baking and will curb your sweet tooth without spiking your blood sugar! Just 6 g net carbs!

No Bake Keto Turtle Cheesecake

With a mock cookie crust, creamy sugar free caramel cheesecake filling, topped with more caramel sauce, pecan pieces and a drizzle of sugar free chocolate sauce, this will be a big hit with all the family and even the non low carb ones too!

The good news about a no bake cheesecake is the convenience! No water bath needed, and no time needed to cook and cool and then decorate.

This is a great recipe to add to your holiday baking and may be your new favorite dessert because of it’s easy no bake steps! I doubt anyone will complain if you add this to your list for your Thanksgiving or Christmas menu, as nice change of pace from the typical traditional desserts.

Carbs in Turtle Cheesecake

According the the app Cronometer, a piece of a traditional turtle cheesecake from Walmart with 85 grams per slice, has 31 g carbs and 20 g of sugar.

Those carb counts are way to high for anyone following a keto diet and even those on a low carb diet as this will surely spike blood sugar and cause cravings.

Our keto pecan caramel cheesecake has just 6 grams of net carbs per slice and 7 grams of protein which is a big difference compared to a traditional turtle cheesecake.

Store Bought Sugar Free Caramel Sauce Options

I have not seen any sugar free caramel sauce options at my grocery store so often I would just use Amazon to purchase this brand online if you don’t have time to make it at home.

Can I make this tree nut free?

Yes this can be made nut free by using sunflower seeds or sunflower seed meal in the crust, and skipping the crunchy candied pecans on top.

Make this Keto Turtle Cheesecake Good, Better or Best

Good– This easy recipe is delicious and good enough without any toppings, just with the keto caramel sauce on top, but you can make it a little bit better if you have some extra time!

Better– Make this Turtle cheesecake even better using my candied pecan air fryer recipes. But if you don’t have time, simply toast some chopped pecans to add over the caramel sauce for a nice crunch.

Best– This option is only if you have the most time before serving, add the melted butter chocolate chip drizzle over the top of this cheesecake.

No-Bake Low Carb Keto Pecan Caramel Turtle Cheesecake

Ingredients

Mock Oreo Cookie Crust

  • ½ cup unsweetened cocoa powder
  • ¾ cup sunflower seed flour or almond flour
  • cup Monk Fruit Allulose Confectioners
  • 4 tablespoon salted butter softened

Caramel Cheesecake

  • 16 ounces cream cheese room temperature
  • 2 teaspoon caramel extract
  • 1 recipe my sugar free caramel sauce (save ¼ cup for topping)
  • ½ cup heavy cream
  • 2 teaspoon caramel monk fruit liquid sweetener or vanilla stevia

Optional Topping

  • ½ cup my Air Fryer Keto Candied Pecans recipe optional (you will need to double the recipe to make ½ cup)
  • ½ cup Sugar Free Chocolate Chips
  • 1 tablespoon butter

Instructions

  • Prepare the buttery crust mixture by adding all ingredients into a food processor and process until combined and you have course crumbs. Press onto the bottom and sides of an 8 inch springform pan. Refrigerate.
  • Make the keto caramel sauce and set it aside to cool slightly while you prepare the cream cheese mixture. Add the cream cheese, caramel extract to a stand mixer or a large mixing bowl using an electric mixer. Blend until combined.

    Pour in a ½ cup of the caramel sauce and blend until incorporated. Reserve ¼ cup for the top of the cheesecake.

  • Pour in heavy whipping cream and caramel monk fruit sweetener into the cream cheese mixture. Blend until thick and smooth. Taste and adjust sweetener if needed.

    Spread the cheesecake batter into the crust making an even layer. Spread the remaining caramel sauce over the top of the cheesecake and cover the pan with plastic wrap. Refrigerate for 6-8 hours or overnight.

  • To serve with optional toppings;

    Prepare the keto candied crunchy pecans and sprinkle over the top of the cheesecake.

    Add sugar free chocolate chips and butter to a small microwavable bowl and microwave for 30 seconds, stir until smooth, no lumps. Alternately you can add butter and chocolate chips to a small saucepan and melt over low heat on the stove.

    Drizzle the chocolate sauce over the cheesecake and serve.

  • Store any leftover keto turtle cheesecake in an airtight container in the fridge for up to 5 days.
