Ingredients

For the Onion “Bun”:

2 white onions large4 tablespoons cheddar cheese shredded

For the Patties:

1 pound ground beef 80/20¼ teaspoon salt to taste¼ teaspoon pepper to taste4 slices American cheddar cheese2 tablespoons keto Thousand Island dressing

Instructions

Slice onions into thick rings and cook in a hot skillet until softened and slightly charred.
Sprinkle 2 tablespoons of shredded cheddar cheese on one side of each onion ring. Once the cheese melts, flip it over so the cheese is on the bottom. Cover with a lid and cook until melted and crispy. About 1-2 minutes.
Divide ground beef into 4 portions. Form into a burger patty shape then season with salt and pepper
Cook patties in a skillet or grill until desired doneness is reached. Place a slice of American cheese on each patty and let it melt while the patties rest.
Assemble burgers by placing a cheese-coated onion ring and a spoonful of the Thousand Island sauce, followed by a beef patty, and repeating layers as needed. Finish with a cheese-coated onion.
